When I tried to recreate Costcos mini quiches, I was thrilled to see it worked!!! Serves 48 delicious mini quiche bites, or 12-14 regular muffin tin sized quiches. Can be made vegan.

Ingredients

For 48 mini quiche bites (Base Ingredients):

  1. 2 batches of homemade savory dough
  2. 6 eggs, OR 1 batch savory egg substitute
  3. 1/2 cup + 1 tsp sugar, OR homemade (recipe is legume & corn free)
  4. 1 TB oil, for cooking

Pick 2 flavors below

For 24 mini meat quiches:

  1. 1/2 cup Daiya cheddar shreds, OR homemade here (recipe is corn and legume free)
  2. 1/3 cup bacon bits
  3. 1/3 cup cubed ham

For 24 mini Spinach Quiches:

  1. 1/2 cup mozza shreds, OR homemade here (recipe is corn and legume free)
  2. 1/4 cup , OR homemade (recipe is legume & corn free)
  3. 2 cups fresh spinach, chopped into small bites

For 24 mini cheesy potato quiches:

  1. 1/2 cup presoaked hash brown shreds
  2. 1/4 cup , OR homemade (recipe is legume & corn free)
  3. 1/3 cup Daiya cheddar shreds, OR homemade here (recipe is corn and legume free)
  4. 1/3 cup bacon bits, if desired

For 24 mini veggie quiches:

  1. 1/2 cup Daiya cheddar shreds, OR homemade here (recipe is corn and legume free)
  2. 2-3 baby bell peppers, chopped into tiny pieces
  3. 3-4 cremini mushrooms, diced finely

Directions

  1. Preheat oven to 400 degrees.
  2. Whisk together eggs or substitute & then pour half of that mixture into a separate bowl.
  3. Choose two flavors for your quiches. Purée all ingredients of chosen flavors (except for the meats and veggies) in a blender, till smooth.
  4. Mix half of the egg mixture with one of the flavors you chose and do the same for the second flavor. Add in the chopped meats and veggies by hand into each flavor.
  5. Get your dough out and make 48 (1 inch) balls for mini quiches or 12-14 (2.5 inch) balls for regular sized quiches.

6. Press your dough balls into the bottom and sides of lightly oiled mini or regular sized muffin tins like picture below. (if your dough is a bit sticky, you can lightly dust with chosen flour or starch)

  1. Pour 1-2 tsp of flavored quiche mixture over the dough (or 1/3 cup mixture for regular sized quiches).
  2. Bake the mini quiches for 15 mins or till edges are golden brown. Bake the regular quiches for 25-30 mins or till tops are golden brown.
