In the world of food allergies, using alternative food substances is essential, save avoiding the food altogether. The result of variations with new ingredients can also be surprisingly tasty and even healthier than the standard fare!

Here are 4 standard recipes that have been “allergy friendly’d” to produce yummy, nutrition-loaded versions of brownies, macaroni and cheese, quiche and chocolate cake.

Let the allergy friendly magic begin:

1. BUTTERNUT SQUASH MAC & ‘CHEESE’ a.k.a. Mac and Cheese

Ingredients
– 1 medium butternut squash
– 1/2 cup milk
– 3 tbsp apple sauce
– 1 tsp garlic
– 1 tsp tumeric
– 3 cups bowtie pasta
Directions
– Cut squash into 2-3 inch pieces and boil until tender, remove casing
– Cook pasta
– Put cooked squash into a blender with milk, tummeric and apple sauce and puree
– Mix pasta and “cheese-like” butternut squash sauce together
– Heat and serve

2. SWEET POTATO QUICHE (No Egg/No Flour) a.k.a. Quiche

Ingredients:
– 1 red onion, cut into thin slices
– 1 1/2 cup of spinach leaves
– 1 garlic clove chopped
– 2 tsp. olive oil
– 2 medium sweet potatoes
– 1/3 cup milk
– 3 tbsp. unsweetened apple sauce
– 2 1/2 tsp. baking powder
– 200 g. feta cheese
– 1/2 tsp. nutmeg
– fresh ground black pepper

Directions
– Grease a medium flan dish
– Cut the sweet potato into sections and boil until softened
– Saute the onion and garlic in olive oil for 1-2 minutes, then add spinach
leaves to cook for another minute until wilted Add nutmeg and pepper to the mixture
– Place the sweet potato and apples sauce into a blender and chop for course texture
– Mix the sweet potato, onion/spinach mixture and feta cheese in a bowl and mix
– Place the mixed ingredients into the flan dish
– Bake 190 degreesC for 35-40 minutes until golden
– Let stand 5-10 minutes before slicing
Serve cut into wedges with salad on the side

3. CHICKPEA BROWNIES (no flour) a.k.a. Brownies

Ingredients
– 1 15-oz can of chick peas
– 6 tbsp. apple sauce
– 1/2 cup sugar
– 1/3 cup maple syrup
– 1/2 cup of unsweetened cocoa powder
– 1 tsp. baking soda
– 1 tsp. pure vanilla extract
Directions:
– Heat oven to 350 degrees
– Prepare square baking pan and cover with oil spray
– Place batter into baking pan
– Bake for 30 minutes or until toothpick placed in center comes out dry
– Cool completely and enjoy!

4. SMARTIES CHOCOLATE CAKE (No Egg or Gluten) a.k.a. Chocolate Cake

Ingredients:
– 1 1/2 cups white sugar
– 1 3/4 cups gluten free flour
– 3/4 cup unsweetened cocoa powder
– 1 1/2 tsp. of baking powder
– 1 1/2 tsp. baking soda
– 1 tsp salt
– 4 tbsp. unsweetened apple sauce
– 1 cup milk
– 1/3 cup vegetable oil
– 2 tsp. vanilla extract
– 1 cup boiling water
– 1 container chocolate icing. Large package of Smarties
Directions:
– Preheat oven to 350 degrees F, Grease and flour 14 inch cake pan
– Mix dry ingredients in a large bowl, add the wet ingedients and use mixer on med, stir the boiling water in last
– Pour the batter in the pan evenly
– Bake for 30-35 minutes, until a toothpick in center comes out fry
– Cool in the pan for 10 minutes, then move to rack to cool completely
– When cooled add vanilla icing and decorate with Smarties!
